FOOD STRATEGY | Torbay Retirement Villages | aged care kitchen designs
December 12, 2011
Torbay Retirement Villages needed the latest in high tech HACCP compliant kitchens to supply 4000 meals per day to their aged care residents and surrounding client base including: the aged care facility; Hervey Bay Surgical Centre (hospital); Mantra Resort; Parklands Retirement Haven and other convention and community groups. Moving hot and cold meals which arrive in perfect condition requires considerable planning and investment in specialised equipment. The kitchen follows a stringent cook-chill process using blast chillers and combi ovens. Food boxes that can carry both hot and cold foods without losing more than 1 degree Celsius per hour were essential to getting HACCP safe food to its destination among the aged care residents. The project includes 8 cold rooms, 3 combi-ovens (capacity of 70 gastronorm trays at once), 2 x 8 burner cook tops, grill plate and char grill, 2 steam kettles, 8 basket deep fryers. There are separate areas for food prep, specialised catering, separate cold and dry storage, delivery and wash down. Aged care kitchen designs by www.foodstrategy.com.au local people | global vision
